I would like to see elevation data mapped to a lat/long coord for all points in New Zealand, down to a resolution of 5m.

Kia ora Christian, You can access an 8m gridded Digital Surface Model for all of New Zealand from the LINZ Data Service: https://data.linz.govt.nz/layer/51768-nz-8m-digital-elevation-model-2012/ This is based on 20m contours. We also provide LiDAR based 1m gridded bare earth DEMs and highest feature DSMs where available.
